- Mashed Potatoes: Chop potatoes. Place in a pot and cover completely with water. Bring to a boil and cook for 15-20 minutes or until fork tender. Drain, reserving 1 1/2 cups water.
- Combine potatoes with 1 1/2 cups water, 1/3 cup milk, butter and 1/2 tsp salt in saucepan over medium heat. Bring to boil then remove from heat. Whip until fluffy.
- Gravy: Make a roux by combining oil with 1 1/2 tbsp of flour in a medium saucepan over medium to low heat. Heat the mixture for 20 minutes, stirring until it is a chocolate color.
- Remove the mixture from the heat, add remaining ingredients to saucepan and stir.
- Put saucepan back over heat, turn it up to medium and bring gravy to boil. Reduce heat and simmer for 10-15 minutes or until thick.
- Serve the mash potatoes with gravy poured over the top.
