Ingredients

Directions

  1. Prepare rice according to package directions.
  2. Meanwhile, slice the onion into wedges, chop the bell peppers, thinly slice the carrot, mince the garlic and ginger, and slice the mushrooms.
  3. In a small bowl, mix the cornstarch and water. Add the soy sauce, brown sugar, sesame oil, and red pepper flakes. Add hot water, mix well, and set aside.
  4. Heat olive oil in a large deep pan over medium-high heat. Add the onion, bell peppers, and carrots, and sauté for a few minutes until the onions are translucent and fragrant.
  5. Add the ginger and garlic and sauté for 2 minutes, stirring to prevent burning.
  6. Add the mushrooms and cook for 2-3 minutes. Add the water chestnuts and the frozen edamame. Sauté for 2 minutes.
  7. Add the sauce to the pan and stir until thickened.
  8. Taste and adjust seasoning levels, then serve over rice, garnishing with sesame seeds.
