Directions
- Heat half of the olive oil in a large skillet over medium-low heat. Add shrimp, red pepper flakes, paprika, Italian seasoning, and salt.
- Cook on medium heat until shrimp are cooked through, about 5 minutes. Remove shrimp from the skillet and set aside.
- In the same skillet, add chopped tomatoes, basil, spinach, and garlic. Cook on medium heat for 3-5 minutes until the spinach wilts slightly and tomatoes release some juice. Remove from heat and adjust seasoning if needed. Cover with a lid.
