Directions
- Preheat the oven to 450°F.
- Drain and press the tofu to remove excess moisture, then cut into 2 pieces for each serving being prepared.
- Marinate the tofu in soy sauce for 10 minutes.
- In a bowl, toss broccoli florets with half of the olive oil, salt, and pepper.
- On a large sheet pan, toss the butternut squash with the remaining olive oil, salt, pepper, and garlic. Bake for 15 minutes.
