- Boil sweet potatoes in water until fork tender, 10-12 minutes. Drain, mash, and set aside.
- Preheat oven to 400 degrees F.
- Heat a large oven-safe skillet over medium-high heat. Add 1 tablespoon oil to pan; swirl to coat. Add yellow onion, garlic, and jalapeño to pan; sauté 3 minutes.
- Add sweet potato,1/2 teaspoon salt, and black pepper to pan; sauté 2 minutes.
- Combine potato mixture, panko, 1 1/2 tablespoons juice, chickpeas, and egg in a food processor; pulse until chickpeas are coarsely ground.
- Divide potato mixture into 8 patties.
- Return skillet to medium-high heat. Add remaining 1 1/2 tablespoons oil to pan; swirl to coat.
- Add patties to pan; cook 3 minutes or until browned. Carefully turn patties over. Place pan in oven; bake for about 6 minutes or until browned.
