Directions
- Preheat oven to 425°F. Cook the sweet potato for 10 minutes. It will not be fully cooked at this point.
- While the potato cools, whisk together tahini, sesame oil, vinegar, honey, red pepper flakes, and salt in a small bowl. Set aside.
- Spiralize the sweet potato into noodles. Heat olive oil in a medium sauté pan and cook the sweet potato noodles for about 5 minutes, until slightly crunchy. Cook longer for softer noodles.
- Toss the noodles with the dressing, green onions, and sesame seeds. Serve warm or cold.
