Directions
- Preheat oven to 425 degrees F. Line a sheet pan with foil. Rub oil all over with and season with salt and pepper. Place fish, skin side down, on the foil lined pan. Bake for 4-6 minutes until fish is cooked through and easily flaked. Remove from oven and flake fish.
- Combine fish with remaining ingredients (excluding coconut oil) and form mixture into patties. Make two patties.
- Melt coconut oil in a pan over medium-high heat. Add patties to the pan and cook unti golden brown on each side. Serve and enjoy!
