Directions

  1. Preheat oven to 425 degrees F. Line a sheet pan with foil. Rub oil all over with and season with salt and pepper. Place fish, skin side down, on the foil lined pan. Bake for 4-6 minutes until fish is cooked through and easily flaked. Remove from oven and flake fish.
  2. Combine fish with remaining ingredients (excluding coconut oil) and form mixture into patties. Make two patties.
  3. Melt coconut oil in a pan over medium-high heat. Add patties to the pan and cook unti golden brown on each side. Serve and enjoy!
