Ingredients

Directions

  1. Preheat oven to 400 degrees F.
  2. Place mushrooms in a large microwavable bowl. Sprinkle generously with salt, cover lightly and cook on high for 8 minutes.
  3. Drain very well.
  4. Toss drained mushrooms with 3 tablespoons olive oil and place on a large baking sheet. Roast for 15 minutes, stirring half way through.
  5. Meanwhile, whisk together remaining tablespoon of olive oil, vinegar, garlic, and rosemary. Pour over mushrooms on baking sheet and toss to coat all mushrooms. Return to oven and roast for 5 more minutes, stirring half way through.
  6. Season to taste with additional salt and pepper, if desired. Serve warm.
