- Preheat oven to 350 degrees F.
- Slice squash into rounds approx 1/4" thick.
- Beat egg in a bowl and pour panko into a seperate small, shallow dish. If desired, mix panko with salt and any desired spices.
- Dip each squash slice in egg, shaking off excess, then dip it in panko, coating both sides, and place on a greased baking sheet.
- Bake for 8-12 minutes, flip slices, and bake for another 8-12 minutes. Serve warm.
