Directions
- Chop the onion and garlic, set aside.
- Heat 1/2 tbsp olive oil in a large pan on a low-medium heat.
- Add onion to the pan and cook until soft and translucent in color (5-10 minutes), then add garlic.
- Peel and roughly chop potatoes, add to pan, stir.
- Add the broth and cook until hot and potatoes are soft and fork tender.
- Mix in almond milk.
- Remove from heat, cool slightly, and blend carefully until smooth. Enjoy!
