  1. Finely chop parsley and shallots. Peel and slice garlic.
  2. To prepare the prawns, first chop off the head with a sharp knife. Next, score down the shell along the backbone of each prawn, and carefully remove the intestinal tract (this is the black line).
  3. Heat the oil in a frying pan and fry the prawns for about 3-4 mins, turning. Add the garlic and the shallots and fry briskly for another minute, then add the butter and parsley. Season, then sprinkle over the lime juice and serve. Eats well with crusty bread.
