Directions
- Preheat the oven to 375°F.
- In a large skillet, heat the olive oil over medium heat. Sauté the diced onions and green bell pepper for 2-3 minutes until softened.
- Add the ground turkey to the skillet and cook for 6-8 minutes, crumbling the meat until fully cooked.
- Stir in the taco seasoning, half of the salt, and half of the pepper until well combined.
- In a medium bowl, mix together the salsa, corn, and black beans.
- In a large bowl, whisk together the eggs, milk, and remaining salt and pepper.
- Spray a 9x13 inch baking pan with non-stick cooking spray.
- Layer half of the meat mixture, tortilla quarters, half of the salsa/corn mixture, and half of the cheese. Repeat all layers except for the last cheese layer.
- Pour the egg mixture evenly over the layered ingredients and top with remaining cheese.
- Bake in the preheated oven for 45-55 minutes, or until the center is set and no longer jiggles.
- Serve the casserole topped with chopped cilantro and sliced avocado.
