Directions
- Preheat the oven to broil.
- Heat a large 12" skillet over medium-high heat. Add olive oil and diced onion, cooking for 5 minutes until softened and translucent.
- Reduce heat to medium, add garlic, and cook for another 2 minutes. Stir in tomatoes, vegetable broth, bay leaves, oregano, cloves, allspice, and cayenne. Cover and bring to a boil, cooking for 20 minutes.
- Remove the lid and stir the mixture. Add chickpeas and cook uncovered for 10-15 minutes until the liquid reduces by about one third.
- Stir in spinach until it begins to wilt. Season with sugar, lemon juice, salt, and pepper to taste. Remove bay leaves.
- Crumble feta cheese over the chickpea mixture. Broil in the oven until the sauce bubbles and the cheese is golden brown, about 5 minutes.
- Garnish with chopped parsley and serve.
