Ingredients

Directions

  1. Put the lentils into a bowl of water and soak for 15 minutes.
  2. Dice the onion. Chop the bacon into small pieces.
  3. Set a saucepan over medium heat. Add the bacon to the dry pan and cook until crispy. Add the onion to the bacon and sauté until translucent.
  4. Add the lentils, diced tomatoes, tomato juice, thyme, and vegetable broth. Cook for 25 minutes.
  5. Blend the soup in a blender or with an immersion blender. Add the red wine vinegar, and salt and pepper to taste
  6. Serve and enjoy!
