  1. Cut the steak into 1/2-inch to 1-inch cubes.
  2. Season the steak cubes with paprika, salt, and pepper. Set aside.
  3. In a mixing bowl, whisk together soy sauce, minced garlic, honey, sesame oil, rice vinegar, oregano, and cornstarch until thoroughly combined. Set aside.
  4. Heat half of the olive oil in a cast iron skillet over medium-high heat until hot.
  5. Add half of the steak cubes to the hot oil and cook for 2 minutes per side, or until browned and cooked through. Remove from skillet and repeat with the remaining steak cubes, adding extra oil as needed.
  6. Remove all steak bites from the skillet and set aside.
  7. Stir the prepared honey garlic sauce and pour one-third of it into the hot skillet; scrape up the browned bits from the bottom of the pan.
  8. Return the steak bites to the skillet and pour the remaining sauce over them; cook for 1 to 2 more minutes, or until the sauce starts to thicken.
  9. Remove from heat and transfer the steak bites to a plate, drizzling with the pan sauce.
  10. Garnish with sesame seeds and sliced scallions.
