- Core tomatoes (just remove its top green part) and cut them into thin wedges. Chop onion, and celery.
- Add tomatoes, chopped onion, chopped celery, bay leaf, sugar, paprika and salt in a pot.
- Cook uncovered on low heat for around 25-30 minutes or until tomatoes become soft and mixture is juicy. Stir in between occasionally.
- Strain the mixture through a fine sieve to get juice, discard the solids. Another option is to puree the mixture in a blender and strain through sieve.
- Chill the mixture for 30 minutes before serving. Serve in chilled glasses and garnish with lemon wedges.
