  1. Melt the butter and olive oil in a large skillet over medium-high heat.
  2. Add the shrimp and season with salt, pepper, and Italian seasoning. Cook for about 3 minutes, stirring occasionally, until the shrimp turns pink.
  3. Add the minced garlic and cook for an additional minute. Remove the shrimp from the skillet and set aside.
  4. If needed, add more olive oil to the skillet. Sauté the bell pepper, onion, and zucchini, seasoning with salt and pepper to taste. Cook for 3-5 minutes until tender, or longer if softer vegetables are desired.
  5. Return the shrimp to the skillet and stir to combine all ingredients well.
  6. Garnish with freshly chopped parsley and serve.
