  1. Heat a small skillet with olive oil over medium-low heat. Once oil is shiny add chopped onions and minced garlic and cook until onions are slightly transparent (about 3 minutes).
  2. While onions are cooking crack the eggs in separate bowl and beat until just mixed. Add Greek yogurt, water, onion powder, and garlic powder.
  3. Add all of egg mixture into pan. Sprinkle scallions, salt, and pepper on top. Place lid on skillet and cook on medium-low for 5 minutes, flip, then cook until both sides are golden brown.
  4. Serve immediately and enjoy!
