- Pat the fish dry with a paper towel and season liberally with salt and pepper. Slice the vegetables and set aside.
- Heat a large cast iron or non-stick skillet over medium-high heat. Add olive oil and heat until shimmering but not smoking.
- Add the fish to the hot skillet and sear for 3-4 minutes on each side without touching. Once the fish releases easily, flip and cook the other side. Remove from skillet and set aside.
- Add the peppers and onion to the skillet and cook for 2-3 minutes until slightly softened. Add garlic and tomatoes, then season with salt and pepper.
- Stir in the basil, white wine, and chicken stock, scraping up any bits from the bottom of the pan.
- Return the fish to the skillet and cook until it flakes easily, about 3-4 minutes. Add the olives and heat through.
