  1. Pat the fish dry with a paper towel and season liberally with salt and pepper. Slice the vegetables and set aside.
  2. Heat a large cast iron or non-stick skillet over medium-high heat. Add olive oil and heat until shimmering but not smoking.
  3. Add the fish to the hot skillet and sear for 3-4 minutes on each side without touching. Once the fish releases easily, flip and cook the other side. Remove from skillet and set aside.
  4. Add the peppers and onion to the skillet and cook for 2-3 minutes until slightly softened. Add garlic and tomatoes, then season with salt and pepper.
  5. Stir in the basil, white wine, and chicken stock, scraping up any bits from the bottom of the pan.
  6. Return the fish to the skillet and cook until it flakes easily, about 3-4 minutes. Add the olives and heat through.
