Directions

  1. Prepare couscous according to package directions, fluff with a fork, and transfer to a large salad bowl to cool.
  2. To prepare the salad ingredients, drain and rinse chickpeas, dice cucumber and bell pepper, and thinly slice radish and green onion. Add all to the bowl with the cooled couscous and toss gently to combine.
  3. To prepare the dressing, combine olive oil, lemon juice, pressed garlic, honey, cumin, salt and pepper. Whisk to combine and pour over salad.
  4. Toss all ingredients together and serve.
