Directions
- In a frying pan over medium high heat cook bacon until crispy. Drain, then crumble. Set aside.
- Preheat oven to 375°F and butter a 9”x13” baking dish. Set aside.
- In a large bowl, toss cauliflower with oil and season with salt. Spread cauliflower onto two large baking sheets and roast until tender and lightly golden.
- Meanwhile, in a large pot over medium heat, heat cream cheese. Remove from heat, season with salt and pepper, then fold in roasted cauliflower. Taste and season more if needed. Stir in crumbled bacon and then transfer mixture to prepared baking dish. Sprinkle mixture in an even layer.
- Bake until golden, about 15 minutes. If desired, turn oven to broil to toast topping further, about 2 minutes. Garnish with parsley before serving.
