  1. In a large bowl, whisk together the eggs, milk, butter, vanilla extract, whole wheat flour, brown sugar, and salt until thoroughly combined and no lumps remain.
  2. Heat a small non-stick skillet over medium heat and spray with cooking spray.
  3. Pour 3-4 tablespoons of batter onto the hot skillet and tilt to spread evenly. Cook for 30 seconds to 1 minute per side, or until lightly golden.
  4. Carefully flip the crepe and cook for another 30 seconds to 1 minute.
  5. Remove the cooked crepe from the skillet and place on a plate.
  6. Spoon 3 tablespoons of berry preserves down the center of the crepe and roll to enclose the filling.
  7. Dust with powdered sugar and enjoy!
