  1. Melt butter in a large pot over medium heat.
  2. Meanwhile, add canned tomatoes along with their juices to a blender and process until well puréed. If you prefer a chunkier soup, leave some small chunks.
  3. Add garlic to the pot and sauté for 30 seconds. Pour in the puréed tomatoes and chicken stock. Bring the mixture to a gentle bubble, then reduce heat and simmer for 10 minutes, stirring occasionally.
  4. Stir in half of the basil, then season with salt and pepper to taste.
  5. Ladle the soup into bowls and drizzle each serving with heavy cream. Garnish with the remaining basil. Serve warm.
