  1. Preheat oven to 350 degrees F.
  2. Beat the eggs, then beat in the cream and salt.
  3. Sauté the mushrooms in butter until tender, 5-10 minutes.
  4. Spread the cheese in the bottom of a greased large glass pie plate; top with the mushrooms.
  5. Pour the egg mixture evenly over the mushrooms.
  6. Bake for 25-35 minutes, until a knife inserted in the center comes out clean. Let stand about 5 minutes before cutting.
