Directions
- Whisk together the chili powder, cumin, oregano, garlic powder, onion powder, cayenne pepper, salt, and pepper in a small bowl.
- Place the steak cubes, two-thirds of the olive oil for steak and vegetables, and half of the seasoning mix into a gallon-sized zip-top bag. Seal and massage to coat the steak. Let rest for several minutes or marinate in the fridge overnight for more flavor.
- In another bowl or zip-top bag, combine the peppers, red onion, remaining seasoning mix, and remaining olive oil for steak and vegetables. Toss to coat.
- In a food processor, puree cilantro, parsley, jalapeno, garlic, scallions, red wine vinegar, lime juice, and olive oil for chimichurri until smooth. Pour into a bowl and set aside.
- Preheat the grill to medium-high heat and oil the grates.
