  1. Heat oil in a large deep skillet over medium heat.
  2. Add the onion, garlic, and carrot, cooking until softened.
  3. Add the zucchini and red bell pepper, cooking for an additional 2-3 minutes.
  4. Stir in the turmeric, paprika, cardamom, tomato paste, and Arborio rice until well coated.
