Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Rub salt and pepper over the pork loin. Place the pork in the hot oil and sear until the edges are browned.
  3. Remove the pork from heat and place it into the bottom of an oval slow cooker.
  4. In a small bowl, whisk together the brown sugar, stevia, soy sauce, Worcestershire sauce, lime juice, garlic, and ginger. Pour the mixture over the pork loin.
  5. Cover and cook on low for 6-8 hours or on high for 4-7 hours.
  6. When finished, place the pork onto a platter, and pour the juices over top before serving.
