Ingredients
Beef chuck
Arm pot roast, separable lean and fat, trimmed to 1/8" fat, all grades, raw

Directions
- Add the onions and peppers to the bottom of a slow cooker. Top with the chuck roast.
- Cut 4 deep slices into the chuck roast and push the garlic cloves into the slices.
- In a small bowl, combine the cumin, thyme, oregano, salt, and pepper.
- Sprinkle the spice mixture over the roast. Pour the tomato sauce, diced tomatoes, capers, and bay leaf into the slow cooker.
- Cover and cook on low for 6-8 hours or high for 5-7 hours.
- While the ropa vieja is cooking, prepare the cauliflower rice. Remove the core from the cauliflower and cut it into florets.
- Add the cauliflower florets to a food processor fitted with the shredding attachment. Pulse until the cauliflower resembles rice.
- Add the chopped bacon to a large saucepan and cook over medium heat until browned and almost cooked through.
- Add the cauliflower rice, tomato sauce, cumin, garlic powder, and onion powder to the saucepan. Mix thoroughly, cover, and cook for 10-12 minutes, stirring occasionally.
- Once the ropa vieja is done cooking, use a couple of forks to shred the beef in the slow cooker.
- Serve the ropa vieja on top of the cauliflower rice. Enjoy!
