Ingredients

Directions

  1. Add the onions and peppers to the bottom of a slow cooker. Top with the chuck roast.
  2. Cut 4 deep slices into the chuck roast and push the garlic cloves into the slices.
  3. In a small bowl, combine the cumin, thyme, oregano, salt, and pepper.
  4. Sprinkle the spice mixture over the roast. Pour the tomato sauce, diced tomatoes, capers, and bay leaf into the slow cooker.
  5. Cover and cook on low for 6-8 hours or high for 5-7 hours.
  6. While the ropa vieja is cooking, prepare the cauliflower rice. Remove the core from the cauliflower and cut it into florets.
  7. Add the cauliflower florets to a food processor fitted with the shredding attachment. Pulse until the cauliflower resembles rice.
  8. Add the chopped bacon to a large saucepan and cook over medium heat until browned and almost cooked through.
  9. Add the cauliflower rice, tomato sauce, cumin, garlic powder, and onion powder to the saucepan. Mix thoroughly, cover, and cook for 10-12 minutes, stirring occasionally.
  10. Once the ropa vieja is done cooking, use a couple of forks to shred the beef in the slow cooker.
  11. Serve the ropa vieja on top of the cauliflower rice. Enjoy!
