Directions
- Preheat grill on high. Brush four 500ml (2-cup) capacity ovenproof dishes with melted butter to lightly grease.
- To make the blue cheese sauce, melt the butter in a saucepan over medium heat until foaming. Add flour and cook, stirring constantly with a wooden spoon, for 1 minute or until mixture bubbles and begins to come away from the side of pan. Remove from heat.
- Gradually pour in half the milk, whisking constantly with a balloon whisk until mixture is smooth. Gradually add the remaining milk, whisking until smooth and combined.
- Place saucepan over medium heat and bring to boil, stirring constantly, for 2 minutes or until sauce thickens and coats back of the spoon. Remove from heat. Add blue cheese, mascarpone, half the parmesan and chives. Stir until cheese melts and sauce is smooth. Taste and season with salt and pepper. Cover surface directly with non-stick baking paper.
- Bring a saucepan of salted water to the boil over medium heat. Add one-quarter of gnocchi (drop onto base of pan in a single layer, but don't overcrowd) and cook for 3 minutes or until they rise to the surface. Use a slotted spoon to drain and transfer to a bowl. Cover with foil to keep warm. Repeat, in 3 more batches, with remaining gnocchi.
- Add blue cheese sauce to gnocchi and stir to combine. Spoon gnocchi evenly among dishes. Sprinkle with the remaining parmesan.
- Cook under preheated grill, 6cm from heat source, for 5 minutes or until golden. Remove from heat. Serve with salad, if desired.
