Directions

  1. Combine cauliflower, chicken broth, water, garlic powder, and onion powder in a large soup pot. Bring to a boil, then simmer for 20-30 minutes until the cauliflower is tender.
  2. Blend the soup until smooth using an immersion blender, or blend in batches with a standard blender and return to the pot.
  3. Stir in the ham and thyme leaves, then simmer for another 10 minutes. Add butter and apple cider vinegar, remove from heat, and season with salt and pepper to taste.
