Directions
- Mix the brown sugar, paprika, chili powder, salt, and garlic powder in a medium bowl. Generously rub the mixture over all surfaces of the ribs. Place the ribs in a prepared dish in a single layer, cover, and chill in the refrigerator for 30 minutes to 1 hour.
- Preheat the grill to medium indirect heat. Center one-fourth of the ribs and two ice cubes on a 12x18 inch sheet of heavy-duty aluminum foil. Bring up the foil sides and double-fold the top and ends to seal the packet, leaving room for heat circulation. Repeat to make one packet for each serving being prepared.
- Grill the packets on a grill rack over medium indirect heat (375°F to 400°F) in a covered grill for 1 1/2 to 2 hours, or until tender.
- Carefully open the packets by cutting along the top folds with a sharp knife to allow steam to escape. Open the top of the foil packets and brush the ribs barbecue sauce.
- Continue grilling over direct medium heat, covered, for 5 more minutes until browned and crisp, turning once.
