  1. Preheat the oven to 425°F and place a 10-inch cast iron skillet inside during preheating.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. Using a pastry blender or your fingertips, cut in the goat cheese and 4 tablespoons of butter.
  4. Make a well in the center and add the buttermilk. Stir until just moistened, adding up to a tablespoon more if needed.
  5. Remove the hot skillet from the oven and add 1 tablespoon of butter. Once melted, drop batter into the skillet using a 1/4 cup measure.
  6. Melt the remaining tablespoon of butter and brush over the biscuit tops.
  7. Bake for 14-16 minutes until the biscuits are golden on top. Remove from the oven and sprinkle with Parmesan cheese.
