  1. Preheat the oven to 450°F.
  2. In a small bowl, combine minced garlic, Parmesan cheese, and fresh thyme. Set aside.
  3. Place the potatoes in a pot and cover with water. Bring to a boil, then reduce to a simmer and cook for 15 minutes or until tender. Drain and transfer to a baking sheet, letting them rest for 5 minutes.
  4. Using the back of a wooden spoon or your palm, gently smash the potatoes. Drizzle with olive oil and sprinkle with salt, then repeat on the other side.
  5. Bake for 15 minutes, then remove from the oven and flip the potatoes. Bake for an additional 15 minutes.
  6. Remove from the oven and sprinkle each potato with the Parmesan garlic herb mixture. Serve immediately.
