Ingredients

Directions

  1. In a bowl whisk together the first nine ingredients until smooth. Keep in the fridge until ready to use.
  2. In a pan warm the oil and add the shrimp.
  3. Sprinkle the Cajun seasoning over the shrimp and cook until fully cooked, about 3-4 minutes. Transfer to a plate and set aside.
  4. In a large bowl combine the lettuce, tomato, shrimp and diced avocado.
  5. Add some of the dressing and toss gently. Add more dressing if desired or store any leftover dressing in the fridge.
  6. Serve the salad on individual plates with some of the hard boiled eggs on the side.
