Ingredients

Directions

  1. Bring 3 cups of water to a boil and add chicken, cook for about 15 minutes
  2. Cut the cooked chicken into 12-inch diced pieces
  3. Heat a skillet with some olive oil spray and add the eggs
  4. Cook and stir until the eggs are thickened throughout but still moist. Remove and set aside
  5. Microwave rice for 90 seconds then add the rice to the skillet
  6. Stir in the soy sauce and continue stirring until the rice is mixed well with the soy sauce and add chicken, eggs and peas
  7. Stir in the pineapple and green onions
