Ingredients
Blue cheese

Directions
- Preheat oven to 375°F. Rinse produce and pat dry. Line a baking sheet with foil.
- Trim and slice green onions. Trim green beans and halve grape tomatoes. Mix blue cheese, green onions (reserve some for garnish), and a pinch of black pepper in a bowl. Rinse pork chops, pat dry, and season with ½ tsp salt and pepper.
- Heat olive oil in a medium non-stick pan over medium-high heat. Cook pork chops 2-3 minutes per side until caramelized. Transfer to baking sheet.
- Top chops with blue cheese mixture, pressing lightly. Roast for 7-9 minutes until crust is melted and chops reach 145°F. Rest 5 minutes.
- Toast almonds in the same pan over medium heat until golden, 2-4 minutes. Remove and set aside.
- Add butter, green beans, and water to the pan. Cover and cook 3-4 minutes until beans are bright green. Add tomatoes and cook 3-4 minutes until beans are tender.
- Add toasted almonds, season with ¼ tsp salt and pepper. Plate green beans, top with pork chop, and garnish with green onions.
