Directions

  1. Arrange the arugula on a serving platter, followed by the radicchio, radish, and half of the parsley and basil.
  2. Drizzle with a little olive oil and some of the apple cider vinegar, and season with salt and pepper.
  3. Heat a large, non-stick frying pan over medium heat. Add a generous splash of olive oil and heat.
  4. Toss the beef in the flour, shake off any excess, and fry for around 3 minutes until golden brown.
  5. Season with salt and pepper, add the onion and remaining vinegar, and stir to deglaze the pan.
  6. Arrange the beef on the leaves and pour over all of the pan juices.
  7. Crumble over the ricotta, top with the remaining basil and parsley, and serve immediately.
