Ingredients
Brown sugar

Sauce, hot chile, sriracha, Tuong Ot Sriracha

Outside skirt steak, separable lean only, trimmed to 1/4" fat, all grades, raw

Directions
- Marinade: mix together soy sauce, oyster sauce, 1 tsp sesame oil, brown sugar, rice vinegar, ginger, minced garlic cloves, sriracha, and white pepper in a bowl.
- Slice beef thinly and add to second bowl. Pourd 1/3 marinade over meat. Stir together, cover and marinade at least 15-20 minutes.
- Cook noodles according to directions, rinse with cold water to cold. Toss with 1 tsp sesame oil and leave in colander until needed.
- Heat wok and add 1 T vegetable oil. Scoop out half of beef from bowl and fry on high for 2-3 minutes. Remove from wok and place on clean plate. Repeat with the remaining beef. Remove to plate.
- Fry the onions in the wok for 2 minutes. Add the yellow pper and cook for 1 minute, then add the reserved marinade. Bring to a boil.
- Add the noodles and beansprouts and cook for 3-4 minutes-tossing the noodles gently so not to break them- until completely heated through. Add in the beef and cook for 1 min. Att the last minute, stir in the sliced green onions and spinach.
- Plate and serve with sesame seeds.
