Ingredients
Pork loin, center loin (chops)
Fresh, bone-in, separable lean and fat, raw

Balsamic vinegar

Directions
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the onion and cook until golden brown. Remove and set aside.
- In the same skillet, heat 1/2 tablespoon of olive oil. Season the pork chops with salt, pepper, and garlic powder. Cook the chops for 5-8 minutes per side, depending on thickness, until desired doneness. Remove and keep warm.
- Add the remaining olive oil to the skillet. Return the onions to the skillet and add the tomatoes, minced garlic, and basil. Cook and stir for about 3 minutes, until the tomatoes are tender. Mix in the balsamic vinegar and season with salt and pepper. Top the pork chops with the onion and tomato mixture, and sprinkle with feta cheese before serving.
