Directions
- Preheat oven to 400 degrees F.
- Give the zucchini a good wash and pat dry. In a baking dish, toss the zucchini with the olive oil and a generous dash of salt and pepper.
- Bake the zucchini for 15 minutes until soft and skin has blistered.
- Once out of the oven, dress with a couple of splashes of red wine vinegar and the chopped mint. Add more olive oil and salt/pepper if desired.
