Ingredients

Directions

  1. Oven bake the bacon at 375 degrees F for 18 minutes, or until crispy. Remove from oven and drain on paper towels; chop.
  2. Whisk eggs in large bowl. Stir in salsa, yogurt, thyme, salt, and pepper.
  3. Sauté onion and peppers with garlic in a frying pan over medium heat with 1 tbsp oil until nearly done, about 5-7 minutes.
  4. Scramble egg mixture in skillet with onions and peppers.
  5. Stir in cheese and bacon when eggs are set. Let cool.
  6. Assemble into burrito wraps.
