- Chop up the onion, celery, carrots, and leek. Also chop up some of the cilantro (to make 7 tbsp.)
- In a large saucepan over medium heat, combine the ginger, onions, leek, carrots, spices and sauté for 5 min Then add in the chopped chicken, and cook until chicken is almost 1/2 way done
- Add in broth and water. Bring to a boil, and using a slotted spoon or strainer, remove any scum/junk floating on the surface.
- Reduce heat to low and simmer for 1-2 hours. Do not cover. or you can do this in an instant pot
- Cook black bean spaghettis aside in a pot of water, these cook very fast so cook to a dente
- Season soup divided out portions of spaghettis and top with cilantro, splash a bit of soy sauce too.
