Ingredients

Directions

  1. Prep mirepoix by chopping celery, onion, and carrot.
  2. Prep herbs by dicing cilantro and parsley.
  3. Heat half of the olive oil in a large pot or Dutch oven over medium-high heat. Sear chicken breast on each side for about 4 minutes per side, then remove from pot.
  4. Add mirepoix and remaining oil to the pot and sauté until slightly translucent, about 3 minutes.
  5. Pour in chicken broth and add chicken breast back to the pot.
  6. Add salt, pepper, turmeric, lemon pepper, cilantro, parsley, and water. Let simmer for at least 45 minutes, or until chicken is cooked through and breaks apart easily.
  7. Break apart chicken into smaller pieces with tongs or a fork before serving. Enjoy!
