- Heat the olive oil in a large pot over medium heat. Sear the chicken thighs on both sides until golden, about 3 minutes per side.
- Add the chopped onion, minced garlic, sliced carrots, and diced celery. Sauté for another 5 minutes until the onion is translucent and the celery softens.
- Stir in the flour, chopped fresh parsley, crushed bouillon cube, and salt to taste. Cook for an additional 3 minutes.
- Pour in the chicken broth and stir. Increase the heat to bring to a boil for about 4 minutes, then reduce the heat, partially cover, and simmer for 20-25 minutes until the chicken is cooked.
- Remove the chicken from the pot, shred the meat, and discard the bones.
