- Cube potatoes into 1/2 inch pieces and chop all other veggies and fresh herbs (except spinach).
- Heat oil in a skillet over medium heat. Add cubed potatoes, cover pan, and cook 8-10 minutes until you can easily pierce with a fork, stirring occasionally.
- Add chickpeas, cover, and cook about 2 additional minutes.
- Add onions, bell peppers, mushrooms, and all of the herbs and spices except basil leaves. Continue to cook another 2 min, stirring often.
- Stir in spinach leaves. As soon as they begin to wilt, take the pan off the heat.
- Serve immediately, sprinkled with chopped fresh basil leaves. Enjoy!
