Directions
- Drain and julienne tomatoes. Slice veal into 3/4-inch thick cutlets. Slice lemon into wedges. Finely chop parsley. Boil potatoes until desired firmness and reserve. Serve as accompaniment to veal with lemon wedges.
- Preheat oven to 200°F and position the rack in the middle.
- Heat oil and half of the butter in a 12-inch heavy skillet over high heat until the butter's foam subsides.
- Spread flour on half of a shallow baking pan. Season veal with salt and pepper, then coat with flour, shaking off excess. Sauté veal in batches, turning once, until browned and just cooked through, about 1 1/2 minutes per side. Transfer to a platter and keep warm in the oven.
- In the same skillet, bring wine, broth, tomatoes, and olives to a boil, stirring to scrape up any brown bits. Add remaining butter, swirl until incorporated. Season with salt and pepper. Pour sauce over veal and garnish with parsley.
