Directions
- Preheat the oven to 325°F.
- Heat olive oil in a skillet over medium heat and cook the chorizo until fully cooked, about 5-7 minutes, then drain excess fat.
- Spray a 3-quart (9” x 13”) baking dish with cooking spray.
- Place the potatoes in the baking dish. Top with chorizo, green chilies, and half of the cheese.
- In a medium bowl, beat the eggs, scallions, and salt with a whisk until well blended. Pour over the potato mixture.
- Bake uncovered for 55 to 60 minutes or until a knife inserted near the center comes out clean.
- Remove from the oven, top with the remaining cheese and jalapeno slices.
- Bake for 2 more minutes, until the cheese melts. Serve with salsa and avocado.
