Ingredients
Cornstarch

Directions
- Prepare the rice according to package instructions.
- In a large bowl, combine cornstarch, water, pepper, and egg whites. Add chicken strips and toss to coat.
- Heat oil in a large non-stick skillet over medium-high heat. Season chicken strips and add to the pan. Brown the chicken and remove to a plate.
- Add red and green bell peppers and onions to the skillet and cook for 1 minute.
- Stir in pineapple chunks with juice, brown sugar, rice wine vinegar, and chicken stock. Bring to a simmer and let the sauce reduce slightly.
- Stir in the cornstarch mixture and bring the liquid to a simmer. Add the chicken strips back to the skillet and cook for 5 minutes. Serve over the prepared rice.
