Ingredients

  1. Soak beans overnight. Make sure you have a large slow cooker.
  2. Mix garlic powder, onion powder, cayenne, pepper and cumin together. Dice chicken. Use half to a third of spice mix to coat chicken.
  3. Dice onions and jalapenos. Mix in a bowl with the garlic and salt.
  4. Using the oil as necessary, fry the the chicken in batches until the surface browns (4-6 minutes). Do not worry about it being cooked through yet. Place cooked meat in slow cooker.
  5. Fry the vegetables in the same pan for 6-8 minutes, stirring infrequently to allow them to brown and soak up the bits of chicken already in the pan. Place in slow cooker.
  6. The above steps can be done the night before and stored in the fridge if you don't have time to cook in the morning. Drain the beans and add to slow cooker. Add the stock, remaining half of the spice mix, and additional water to make sure the chilli is covered. Stir well and cover with lid.
  7. Cook on low for 8 to 10 hours (or high for just over 5 hours). The chilli is done when the chicken is falling apart as you stir it. Store leftovers in containers and eat every day for the coming week!
